As much as I would love to be able to cook a full carvery or a three tiered cake, in reality most of the time I am limited to what I can cook in my small caravan kitchen with an oven that leaves much to be desired.
I know that I am not the only one who is battling the struggles of small kitchens and limited time, so here are a few of my favourite recipes which I have picked up from friends, family, the internet and my own brain…
Sauteed garlic and spinach pasta.
The main ingredients are as follows:
- A bag of spinach,
- Handful of garlic,
- Salt to taste,
- Drizzle of olive oil,
- Pasta (don't ask me how much I always cook too much, just trust your gut on this one...)
I like my food spicy so I also add chilli (fresh or dried), but that is up to you. You can also try adding any other herbs you have lying around.
The (very detailed) instructions:
The pasta takes longer to cook so start cooking it... No I am not going to tell you how to cook pasta, if you don't already know, then ring your mother or ask google.
For the spinach, first peel your garlic and chop it up... or don't chop it up if you are lazy like me. (Both works well).
Chuck the garlic into your frying pan with the olive oil and let it cook for a couple of minutes.
Add your spinach to the pan and make sure to keep stirring it with the garlic. Add your salt and any other seasonings, you may also need to add more oil at this point to make sure it's not too dry.
Within a few minutes your spinach should have shrunk to a fraction of its original size, at this point it is ready.
Serve on top of your pasta, and there you have it, a quick lunch that takes no longer than 20 mins. (It also works as breakfast or dinner.) Also I like to add grated cheese on top, but then again I like to add cheese to most things.
Burrata, peach and Parma ham sandwiches:
Ingredients:
- Blob of burrata,
- One large peach thinly sliced,
- Three slices of bread (home cooked or store bought),
- Olive oil,
- Honey,
- Salt,
- One pack of Parma ham,
- Handful of thyme.
I absolutely love this recipe, but it has a mix of flavours so it is not for everyone.
Instructions:
- So lay your bread out and then divide/ spread your burrata on top.
- Next add a couple slices of ham to each sandwich, followed by your sliced peach.
- Sprinkle the thyme and salt on top.
- Finally give the sandwiches a quick drizzle of honey and olive oil.
A quick and refreshing bite to eat!
Banana pancakes.
Ingredients:
- Bananas,
- Flour,
- Coconut oil, (any other oil will work too)
- Eggs. (to every 3/4 big bananas there must be 2 eggs)
Instructions:
First you must mix the eggs and bananas together to create a nice paste, and also add a spoon of coconut oil to the mixture to ensure the pancakes won't stick whilst cooking.
Then take your flour and add spoon by spoon until the mixture thickens to a thick cream consistency.
Take your mixture and add small dollops to a hot frying pan and cook on each side till golden brown. And that is it, the quickest pancake recipe I know and no added sugar!
Serve with your choice of pancake topping!
